pantitlán is built around one of the most iconic street food traditions in mexico city, tacos al pastor carved directly from the trompo.
this is not the grill version and it is not an interpretation. the meat is layered, slowly roasted, and carved to order so every taco carries the balance of char, fat and flavor that makes pastor what it is meant to be.

IN BETWEEN FLAGS
pantitlán comes from nahuatl and is often understood as “in between flags”.
the name carries a sense of crossing and identity between worlds. hidden spaces, changing cultures, and places that exist somewhere in the middle.
that idea felt right for a taquería tucked behind a bakery in east vancouver, rooted in the spirit of mexico city and waiting to be discovered.
THE TROMPO MATTERS
al pastor is not just a marinade, it is a technique.
the meat is stacked vertically on the trompo, roasted slowly, and carved as it turns so each taco carries crisp edges and tender slices at the same time.
finished with pineapple and served fresh, the way it has been done in mexico city for generations.
